A5 WAGYU MEETS OMAKASE
A5 Japanese Wagyu beef, widely considered the best beef in the world, will form part of the nine-course Omakase menu at Sushi Kamon from Tuesday 8 November - Saturday 3 December. 

Reared solely in Japan, Wagyu beef is the result of a meticulous nurturing technique using native cattle. Cows are extremely well looked after and fed a strict, nutrient-rich diet resulting in their unique marbling, flavour and texture. 

A5 is the highest-grade form of Wagyu. It has an intensely umami taste and a texture soft as butter. For a limited time only, it will be available as part of the £45 and £75 Omakase experience.

IN CONVERSATION WITH MICHAEL NONATO
Introducing Sushi Kamon's Head Chef and Sushi Master, Michael Nonato. Michael began his cheffing career at a Japanese restaurant in 2012 and quickly seized the opportunity to learn the craft of sushi making. He later joined Japanese restaurant group Yashin Ocean House, where he began his rigorous training.

"It took 18 months to learn the basics, I spent 3 months solely learning how to wash rice". After mastering the basics, it was onto learning the fundamental principles of Sushi; understanding the balance of fish and rice, sogigiri (slicing fish), katsuramuki (slicing vegetables) and the relationship between oiliness of fish and quantity of wasabi used."
